APRIL

The days are getting longer and warmer... WONDERFUL! It also means that things get a bit more busy. For starters, we have a Hat Festival in Faversham in the middle of the month. If everyone gets into it, the town will look like there is a huge wedding happening, with everyone walking around in hats! Looking forward.

Some of my favourite food is in season this month. Here are just a few:

CRAB

My absolute favourite seafood. I even prefer crab to lobster. If you have never tried crab, just make a simple salad and enjoy.

CRAB SALAD

1 Dressed crab - or a 250 gm tin of Crab meat
1 Shallot
1/2 Cucumber
1 Lime - juice and zest
2 Tablespoons chopped Coriander
Sea Salt to taste

Slice the shallot and cucumber and place in a bowl.
Add the crab, lime zest and coriander.
Sprinkle on some sea salt and the lime juice.
Toss gently.
Serve with toasted bread triangles, or HOWEVER you like! As long as you enjoy it.

OYSTERS

Oyster is also in season in Britain. I just had to get some from my local fishmonger in Oare. Sprinkle on a bit of sea salt and lime or lemon juice and enjoy. They were truly delicious.
Faversham oysters any day! The best.

WILD GARLIC

Spreading the word about this delicious and FREE vegetable has been my mission this year. There is plenty in the woods. Find a local woods and pick some. You just use the leaves and they taste wonderful and onion-garlicy.
For a simple recipe made a garlic butter or a pesto or even just slice and add to salads.

WILD GARLIC BUTTER

100 gms Butter (I use my favourite Salted butter)
10 Wild Garlic leaves - wipe clean and keep the stocks
1 Green Chilli
A sprinkle of black pepper
A dash of Olive oil
A spoonful of lemon juice

Add all the ingredients except the olive oil to a blender and blend until well mixed.
Pour in the lemon juice and mix.
If the mixture is very thick pour a little olive oil into it and mix well.

Slather the butter onto slices of bread and place under a grill until melted or in a hot oven for approximately 10 minutes.
